Abstract
Brooklyn Central was a casual dining restaurant at a prime mall location in Chandigarh. This case revolves around the restaurant location, menu choice, and design decisions, and the associated trade-offs with the decisions. In particular, the case allows the reader to think about the factors that affect restaurant location choice, and how the location choice affects the supply chain, menu, and other kitchen layout decisions in a holistic manner. Finally, as the restaurant wanted to increase its reach with an additional outlet, the owner faces the dilemma of opening the second outlet either in a destination location (same city with ownership) or in a different city (as a franchise).
