Abstract

In 1966, the consumption pattern of milk was studied in a major city in India. The study attempted to investigate the following aspects: 1) expenditure on milk products as a proportion of family income, 2) the quantity, quality, prices paid for milk products substitutes, 3) changes occurring in the above phenomena as a result of income elasticity, 4) consumption pattern of milk use in drinking, addition in beverages, cooking, ghee, etc., 5) distribution pattern - who sells milk to whom where, 6) attitudes towards milk, pasteurization, availability, etc.
